Every day, workers harvest the asparagus with high criteria. They should take only shoots (sprouts) of good quality and of necessary length, while handling them carefully. Asparagus are classified into 4 categories: small, medium, large and 2nd quality (slightly flowery heads, broken heads, curved, etc.)
