Pancakes with grilled bacon and apples

Ingredients
- 1 3/4 cups flour
- 2 tablespoons granulated maple sugar
- 1 teaspoon baking powder
- 1/4 teaspoon nutmeg powder
- 1/4 teaspoon ground cinnamon
- 2 eggs
- 1 cup milk
- 1 cup sour cream
- 1/4 cup melted butter
- 1 pound sliced bacon
- 2 apple, peeled and sliced
- 1 tablespoon melted butter
- Maple syrup, to preference
Preparation
- Preheat grill to low.
- Stir together all the dry ingredients.
- In a separate bowl whisk together the eggs, milk, sour cream and melted butter. Make a well in the dry ingredients and pour in the liquid. Whisk together until just blended.
- Melt butter in a large heavy skillet over medium heat. For each pancake, ladle about 1/4 cup of batter onto the hot skillet. Cook the pancakes for about 1-1/2 minutes on the first side or until you see bubbles form. Then flip and cook them about half as long, until the second side is golden brown.
- Meanwhile, grill the bacon about 6 minutes on each side. Brush the apple slices with butter and place on the grill until just turning brown.
- Serve the pancakes topped with apples and bacon, and maple syrup.
