What started out as a hobby quickly became a passion and a journey filled with great surprises, now and coming. The Domaine Acer Saccharum uses state-of-the-art equipment and methods. The watchword is safety and quality. The harvesting of maple water is mixed: a network of tubes conveys the water by gravity in stainless steel tanks and a set of traditional metal pails complete the harvest. The freshness of the water collected is crucial in the process and it is kept in a cooling tank before being transformed.
