AA beef bones in blade. prepared from the front quarter, the paddle is separated from the shoulder by a straight cut parallel to the back passing through the joint of the shoulder bone and the scapula. The neck is separated from the pallet by a cut between the third and fourth cervical vertebrae so as to have a square bone pallet. The dorsal tendom remains in the cut, no trimming. Certified Halal.
