My very first Hurricane Mash was based on an attempt to replace native goatpepper after Hurricane Betsy blew all the peppers into the sea in1965. Many families in Nassau would serve fresh pepper and cut limes at the table and everyone would have a little side dish to crush the amount of pepper they wanted with some lime using the back of a spoon. I have expanded this technique into a full line of Hurricanes to satisfy all heat levels from zero to extreme. It’s unique character amplifies flavours in any dish.
