Ras El Hanout
In Morocco, ras el hanout means « the top of the cupboard ». Translation : this is the spice mix that we store preciously and bring out only in special occasions.Actually, the ras el hanout is a complex mix that can be made up with several dozens of different ingredients. Ours is made up with 23 of them. Ras el hanout is used in plenty of dishes, but specially in couscous, braised vegetables and fish.It is mixed at the very end of cooking only because of its floral components.
