This cheddar-type cheese is made from thermized ewe's milk from local producers. Taliah is molded with its cotton and aged in a cellar for between 10 and 16 months. It is recognized by its firm paste and tyrosine grains, rich yellow color and more intense flavor near the heel. It is bursting with fruity and caramel aromas. Taliah is offered periodically.
