Windigo
Firm cheese with a washed rind made from pasteurized whole milk. This Emmental type cheese is aged for a total of 90 days, but for the last 60 days, it is washed with L'Envolée mead, a dry honey wine made at the Desrochers bee farm. This maturing process gives the cheese a delicately fruity taste with notes of mead. The paste is dotted with irregular holes (eyes) and its texture is smooth and rubbery, but supple.
