BLT sandwich

Ingredients

  • 4 slices thick-cut bacon
  • 8 slices granary-style bread
  • 2 tbsp butter, softened
  • 2/3 cup basil pesto
  • 4 small ripe tomatoes, roughly sliced
  • 1/2 small cucumber, thinly sliced
  • 8 slices Cheddar cheese
  • 2 cups arugula, washed

Preparation

  1. Preheat broiler function of the oven to a moderately hot temperature. Place rack about 5" underneath broiler.
  2. Arrange bacon on grilling tray and grill for about 4-6 minutes, turning once, until golden-brown and crisp at the edges. Remove tray and let bacon cool to one side.
  3. Spread bread slices with a little butter and then half of them with some basil pesto.
  4. Top the pesto bread slices with some tomatoes followed by the bacon, cucumber, Cheddar cheese, more tomatoes and then the arugula.
  5. Sit remaining bread slices on top to complete before serving.
