Carrot cake style overnight oats

Ingredients

500 mL (2 cups) almond beverage

500 mL (2 cups) quick cooking oats

5 mL (1 tsp.) vanilla extract

2.5 mL (1/2 tsp.) cinnamon

250 mL (1 cup) grated carrots

125 mL (1/2 cup) maple syrup

125g (4 oz.) softened cream cheese

160 mL (2/3 cup) 2% vanilla Greek yogurt

1 sliced apple
-
60 mL (1/4 cup) pumpkin seeds (optional)
Preparation

In a bowl, mix the almond drink with the oats, vanilla, cinnamon, carrots and half the maple syrup.

In 4 glass jars of 500 mL (2 cups) each, divide the mixture. Close the jars and let stand for 8 hours in a cool place, or overnight.

Just before serving, whip cream cheese and yogurt in a separate bowl using an electric mixer until creamy.
- Top oatmeal jars with cheese mixture. Garnish with apple slices and drizzle with remaining maple syrup. Garnish with pumpkin seeds, to your liking.
