Dark Chocolate Berry Muffins

Ingredients

500 mL (2 cups) all-purpose flour

15 mL (1 tbsp.) baking powder

1.25 mL (1/4 tsp.) salt

125 mL (1/2 cup) canola oil

180 mL (3/4 cup) sugar

2 eggs

125 mL (1/2 cup) 2% plain Greek yogurt

80 mL (1/3 cup) 2% milk

5 mL (1 tsp.) vanilla extract

125 mL (1/2 cup) frozen wild blueberries

125 mL (1/2 cup) diced strawberries

125 mL (1/2 cup) raspberries

125 mL (1/2 cup) dark chocolate pieces
Preparation
- Preheat oven to 205°C (400°F).
- In a bowl, combine flour, baking powder and salt.
- In another bowl, beat oil and sugar with electric mixer until mixture is pale. Add eggs, yogurt, milk and vanilla. Whisk again.
- Gradually add dry ingredients to moist ingredients and stir with wooden spoon until mixture is smooth. Add fruits and chocolate. Stir gently.
- Place paper baking cups in a twelve cup muffin pan. Divide the batter among the cups.
- Bake for 18 to 22 minutes, until a toothpick inserted in the center of a muffin comes out clean. Remove from oven and let cool on a rack.
