Carrot cake style overnight oats

Quantity: 4 servings

 

Ingredients 

  • 500 mL (2 cups) almond beverage

  • 500 mL (2 cups) quick cooking oats

  • 5 mL (1 tsp.) vanilla extract

  • 2.5 mL (1/2 tsp.) cinnamon

  • 250 mL (1 cup) grated carrots

  • 125 mL (1/2 cup) maple syrup

  • 125g (4 oz.) softened cream cheese

  • 160 mL (2/3 cup) 2% vanilla Greek yogurt

  • 1 sliced apple

  • 60 mL (1/4 cup) pumpkin seeds (optional)

 

Preparation

  1. In a bowl, mix the almond drink with the oats, vanilla, cinnamon, carrots and half the maple syrup.

  2. In 4 glass jars of 500 mL (2 cups) each, divide the mixture. Close the jars and let stand for 8 hours in a cool place, or overnight.

  3. Just before serving, whip cream cheese and yogurt in a separate bowl using an electric mixer until creamy.

  4. Top oatmeal jars with cheese mixture. Garnish with apple slices and drizzle with remaining maple syrup. Garnish with pumpkin seeds, to your liking.
