Cassoulet with Quebec Duck Confit and Sausage
We cook large Moulard duck legs en confit, crisp the skin and then lay them atop Charles' cassoulet, lovingly made with white beans, duck confit, smoked pork, local sausage and beer, white wine and maple syrup.
