This unripened firm cheese is made with pasteurized milk mainly from farms in the Eastern Townships region. Each grain of cheese presents a cream-colored paste with a fresh and savory taste of fresh milk and salted butter. In the mouth, the cheese sings under the tooth thanks to its distinctive and sought-after texture.
