Jerusalem Artichoke
Jerusalem artichoke is a bumpy tuber vegetable resembling ginger. Its yellowish-white flesh is crunchy, juicy and sweet. The flavor of Jerusalem artichoke improves over time, especially if it was harvested after a light frost. Often prepared in the same way as potatoes, this tuber goes particularly well with garlic, chives, leeks, poultry and white meats (veal, pork), as well as almonds and hazelnuts.
