Loin(1b 4x4 2 GF) - Prepared from a short saddle 2 bones (without fat and kidney), the short loin is separated from the bottuck by a knife cut under the ilium and disjoincted at the 6th lumbar vertebra, the flank is separated from the loin by a perpendicularly cut to the ribs section at 4" of the tender, regular trimming.
