Québec Asparagus: How to Choose It, Recognize It and Enjoy It to the Fullest
In spring, when the snow finally melts and the earth comes back to life, the first local treasures begin to appear. Fiddleheads, rhubarb… and of course, Québec asparagus. A true “primavera” vegetable, asparagus is one of the very first seasonal vegetables to arrive on our tables. It marks the beginning of the market gardening harvests and announces the long-awaited return of local markets.
Québec Asparagus: A Seasonal Star Not to Be Missed
Crunchy, juicy and elegant on the plate, asparagus has everything going for it. Its season, however, is very short, running from May to June, between Mother’s Day and Saint-Jean-Baptiste Day. The result? We wait for it, savour it and enjoy it without hesitation!
Good news for freshness lovers: asparagus is made up of more than 90% water, which gives it that light and irresistible texture.
And when it comes to variety, it certainly has personality. Green, white, purple or even wild, each type of asparagus has its own unique style. The most intriguing is undoubtedly white asparagus, grown sheltered from light under a mound of soil and harvested delicately, one spear at a time.

How to Recognize Québec Asparagus
Choosing local asparagus couldn’t be easier. Look for the yellow elastic band marked “Aliments du Québec.” It’s the sign that they’re grown here!
Every year, more than 3 million elastic bands are distributed across the province, clear proof of the enthusiasm for this local vegetable and the know-how of our producers. And because Québec asparagus season is so short, we make the most of it. Grilled on the BBQ, in salads, soups or even raw, asparagus can be enjoyed in countless ways.

How to Choose the Best Asparagus
To choose fresh asparagus, rely on these three simple criteria:
- Firm, straight stalks that are never limp
- A smooth surface without wrinkles
- Tight, compact tips or buds
Storage Tip
To keep them fresh longer, wrap the asparagus in a damp paper towel and store it in the refrigerator crisper drawer.
Preparing Asparagus: The Pro Trick to Avoid Fibres
To avoid stringy asparagus, use this simple technique. Hold each spear by both ends and gently bend it. It will naturally snap where the stalk becomes tender.
And don’t throw away the tougher end. It’s perfect for making a delicious homemade soup!
Once prepared, Québec asparagus can be cooked in countless ways. They are delicious in the simplest meals, whether grilled on the BBQ, roasted in the oven or served with a little butter and lemon, but they also shine in more gourmet dishes such as creamy risotto, refined salads or appetizers topped with a poached egg and parmesan shavings.

A Little Mystery… Finally Solved
Can we talk about it? Yes, after eating asparagus, it’s common to notice a funny smell in the bathroom. It’s completely normal! It’s the result of a natural chemical reaction: when digesting asparagus, your body releases methyl mercaptan, a molecule also used (yes, really!) by skunks to ward off predators. Interesting, isn’t it?
Québec Asparagus: The Taste of Spring
Short-lived, precious and eagerly awaited every year, Québec asparagus is much more than just a seasonal vegetable. It’s a springtime ritual not to be missed, a simple way to bring freshness and local flavour to your plate while supporting local expertise.
Whether you enjoy them grilled, in soup, in salads or incorporated into more indulgent recipes, they suit every craving. And because their season is as brief as it is intense, now is the perfect time to enjoy them fully, from the market to the table. One thing is certain: when Québec asparagus arrives, spring has truly settled in.
