
Auberge des Glacis occupies a former seigneurial flour mill from 1840 in L'Islet. Founded in 1989, it has passed through the hands of several owners who established its table among the most renowned in Québec. Nancy Lemieux acquired the inn in 2006 and continued operations with the same exacting standards. In 2024, chef Julien Allard took over the kitchen and offers a different Culinary Design menu each evening, based on available products and the inspiration of the moment. Terroir products hold a central place: over 95% of the plate is composed from a pantry of 70 local products, mostly sourced within a 45 km radius. Nancy Lemieux relies 100% on local producers, making her table a showcase for the expertise of artisans from the Côte-du-Sud and Chaudière-Appalaches. The establishment also offers 16 rooms and a pavilion that can accommodate 8 to 10 people.
