Made at Fromagerie d’Oka, this firm, washed-rind cheese is crafted from pasteurized milk and aged for a minimum of 110 days. Its paste features a thin layer of edible ash at the centre, giving it a distinctive flavour. This is a cheese best enjoyed slowly melted and is perfect for sauces and raclette.
