Nordic shrimp salad

• 300 g (500 ml / about 2 cups) Nordic shrimp
• ½ cucumber, diced
• ½ shallot, finely chopped
• 1 L (4 cups) Boston lettuce
• A few sprigs of fresh dill
• Plain tortilla chips, crushed (such as MTL GRINGO), to taste

For the dressing

• 100 g (3½ oz) labneh (strained yogurt cheese)
• 60 ml (¼ cup) plain Greek yogurt
• 30 ml (2 tbsp) camelina oil
• 30 ml (2 tbsp) apple cider vinegar
• 15 ml (1 tbsp) fresh dill, chopped
• Salt and pepper, to taste
