Imagined by Simon Perreault, a graduating student at École hôtelière de Lanaudière, this sandwich was prepared in just 30 minutes as part of the Culinary Challenge presented by Gordon Food Service at the 2026 edition of the Aliments du Québec au menu Restaurateur Awards.

The three young culinary talents who took part in the challenge had to create a sandwich using ingredients selected from a range of around 50 Quebec products, representing four worlds: the St. Lawrence River, the forest, the fields, and the towns and villages.

This sandwich celebrates Quebec’s forest-inspired flavours with mushrooms, which pair beautifully with walnuts and truffle butter for a rich, earthy taste. Through recipes like this one, the next generation of culinary talent shows us that, with a little imagination and creativity, local ingredients become the perfect playground for showcasing everything Quebec has to offer.

Ingredients

2 slices rustic bread
125 g oyster mushrooms
2 tsp apple balsamic vinegar
1 tsp maple syrup
1 tbsp walnuts
2 to 3 ground cherries
40 g Chemin Hatley cheese
1 tbsp truffle butter
Salt, to taste

Instructions

Dans une poêle, faire revenir les champignons puis déglacer avec le vinaigre.
Ajouter le sirop d’érable, les noix et les cerises de terre et bien mélanger.
Garnir le pain de fromage et de la préparation aux champignons.
Grill the sandwich in the truffle butter until golden brown.
Serve garnished with a few fresh ground cherries.
