Legendary Smoked Salmon Bagel

Created by Émilie Aubuchon, a graduating student at École hôtelière de Lanaudière, this sandwich was developed in just 30 minutes as part of the Défi culinaire presented by Gordon Food Service at the 2026 edition of the Aliments du Québec au menu Restaurateur Awards.

The three young culinary talents who took part in the challenge had to create a sandwich using ingredients selected from a range of around 50 Quebec products, representing four worlds: the St. Lawrence River, the forest, the fields, and the towns and villages.

This legendary smoked salmon bagel celebrates the richness of the St. Lawrence while striking a balance between nutrition, enjoyment and creativity. Through recipes like this one, the next generation of culinary talent shows us that, with a little imagination and creativity, local ingredients become the perfect playground for showcasing everything Quebec has to offer.
