Turkey and Cranberry Ciabattas

• 125 mL (1/2 cup) mayonnaise
• 15 mL (1 tbsp) old-style mustard
• 4 ciabattas
• 500 mL (2 cups) cooked, shredded turkey
• 125 mL (1/2 cup) cranberry chutney
• 1 small red onion, thinly sliced
• 4 slices Oka cheese
• Pepper to taste
• 500 mL (2 cups) spring mix lettuce

Homemade Cranberry Chutney

• 10 mL (2 tsp) olive oil
• 1 small onion, chopped
• 15 mL (1 tbsp) grated ginger
• 10 mL (2 tsp) chopped garlic
• 750 mL (3 cups) frozen cranberries
• 125 mL (1/2 cup) sugar
• 60 mL (1/4 cup) orange juice
• Salt and pepper to taste
