Aged Veal Chop with Five Spices and Grilled Apple Salsa

• 2 aged veal chops (Famille Fontaine brand)

Marinade:

• 30 ml (2 tbsp) camelina oil (or olive oil)
• Zest of 1 lemon
• 15 ml (1 tbsp) fresh thyme
• 5 ml (1 tsp) five-spice powder
• 1.25 ml (1/4 tsp) cayenne pepper
• Salt and freshly ground pepper to taste

Salsa:

• 2 Cortland or Spartan apples from Quebec, halved and grilled
• 1 Spanish onion, halved and grilled
• 1 orange bell pepper, diced
• 1 yellow bell pepper, diced
• 30 ml (2 tbsp) 1 tablespoon camelina oil (or olive oil)
• 15 ml (1 tablespoon) lemon juice
• 15 ml (1 tablespoon) honey
• 30 ml (2 tablespoons) chopped curly parsley
• 5 ml (1 teaspoon) five-spice powder
• Salt and freshly ground pepper to taste
